Cocina Molecular: gastronomy and science for all audiences

Seville, June 5, 2017. Aimed at all audiences, Molecular Cuisine is an activity that aims to highlight the importance of Biophysics in our daily activities.

Participants will become familiar with the scientific basis on which such an everyday act as cooking is based, and will learn about the possibilities that science offers to gastronomy, allowing them to explore new culinary horizons.

Through interactive presentations, experiments and recipes, scientists from the Isla de la Cartuja Scientific Research Center (cicCartuja) will show attendees how processes such as spherification (forming solid spheres that contain a food in a liquid state) or gelation (using gels to create solid textures) are carried out.

These processes are being introduced among the general public for whom the taste of the dish is no longer enough, but also its presentation. Another purpose is to raise awareness among the population that all ingredients used in Molecular or Avant-garde Cuisine are completely harmless. In addition, a general overview will be offered of more compounds that are currently being used in kitchens and whose origin is the laboratory.

The meeting is on June 8th from 11:00 am, in front of the Rectorate of the University of Seville (c/ San Fernando, 4). Attendance is free.

Framed within the XVI Congress of the Spanish Society of Biophysics, which will take place at the cicCartuja from June 6th to 8th, Molecular Cuisine is an outreach activity sponsored by the University of Seville and coordinated by Alejandra Guerra Castellano, a doctor from the Institute of Chemical Research. Students from the Biochemistry Degree at the University of Seville collaborate in the event.

Molecular Cuisine was created with the purpose of instructing and outreach beyond the celebration of this congress. During the course of this activity, t-shirts will be put on sale and all the profits obtained will go to the Food Bank of Seville.
